Spotlight: Chocolate Fudge Cake

At 8 pounds and 5 inches tall, our Chocolate Fudge Cake is a showstopper! Rich, moist, and addictive, this chocolate-lover’s dream has surprising origins according to its creator, Chef Boyd Kerr. “My favorite cake is really that grocery store bakery cake. It’s a comfort food for me - not that I grew up with it. My chocolate cake is along those lines, but way better. It’s moist, actually tastes like chocolate, and is an all-around rich, fudgy experience.”

Whilst many chocolate cakes on the market have the tendency to taste like substitutes and sweeteners, ours is made with quality, natural ingredients; a difference you can taste. Pure vanilla, the best Dutch-processed cocoa, and an evolving use of different mixtures of chocolates all come together to form a quality, thoughtful product. “The mouthfeel and the melt of my chocolate is super important to me because there are a lot of bad cakes out there. I want to make sure that I’m giving people value.”

“The death of cake is air and moisture,” says Chef Boyd. “You want to try to keep that away, which is why you cover it consistently. I use a simple syrup, some other secret ingredients, and I douse each layer of cake to make sure it stays fresh and moist.” Using this and other techniques picked up over decades of experience, Chef Boyd has designed a cake that can sustain itself for a week on the countertop, as long as it stays covered. This makes our Chocolate Fudge Cake a wonderful gift that promises to deliver again and again over the course of the week (although it’s usually devoured before then).

Chocoholics can feel good knowing this cake was created by a fellow chocolate fiend. We recently asked Chef Boyd an extremely difficult question. “What’s my favorite? I mean if I had to pick one… if I was on a deserted island and I couldn’t live without it? I’d have to go with chocolate cake. I love carrot cake, don’t get me wrong.
