Spotlight: Bread Pudding

Is it pudding? Cake? A bread? Do I need a bowl, or a plate? A lot of people don’t know what bread pudding is. The South is usually where most people can identify it, though it has been gaining popularity in the US throughout the past decade.

What is Bread Pudding?

Bread pudding is basically just soaked bread in milk and cream, with the addition of eggs, baked in the oven. That’s it! It becomes sliceable decadence in the oven as the egg bakes out and the cream sets up. Eaten hot or cold (we like it hot), bread pudding serves as the perfect vehicle for a multitude of flavors. It can be enjoyed on a plate or in a bowl, with a fork or spoon… whatever you prefer! According to Chef Boyd, “My favorite way to eat this bread pudding, if you have a deep or a tabletop fryer at home, is to cut it into sections, fry it, and then put ice cream and caramel on top. That’s the be-all and end-all, and that’s what I did in the restaurant.”

We make our Butterscotch Bread Pudding with brioche, which has a unique flavor to it. As an egg bread, it lends well to the cooking process and flavor profile. Its fantastic texture absorbs the milk and cream really well, sets nicely, and has a beautiful color. Chef Boyd says, “It’s slightly yellow, so it actually works really well with the butterscotch that I use. Color coordination is really important with food, because people eat with their eyes first. Obviously it has to be the right flavor, and you have to be consistent with the product. The bread pudding also gets the Salted Caramel Sauce. It’s honestly the perfect marriage of color, texture, and flavor.”

Bread pudding is a treat that can be enjoyed throughout the whole year, no matter the occasion. In fact, Chef Boyd has been thinking about debuting a flavor of the month or quarter club, with flavors like pumpkin around Thanksgiving, and eggnog around Christmastime/the holidays.
